In my neck of the woods we have harsh winter months. If I want to extend the coffee outside season I have to make a few adjustments to my methods. When the temps drop well below freezing it makes stopping for any length of time very difficult. Unless you want to carry a lot of extra clothing. Rather than boiling water and preparing coffee during a stop I prepare the coffee at home. I pour it into an insulated thermos and carry it on my bike. Wen I find a nice place to stop, preferably out of the wind, I pour a piping hot cup of coffee and enjoy. The warming effect of the hot coffee is a bonus.
